Sencha is the classic Japanese green tea and it is made from the first picking of the leaves in spring. The fresh picked leaves are steamed and dried. The long, flat emerald green needles of tea are flecked with hints of pale green and give a light golden-yellow infusion. The delicately sweet aroma and flavour are reminiscent of freshly mown gras and sea breezes.
